CAVEA, a natural amphitheatre for a new expression of wine

With CAVEA, the Gouges family ventures into new Burgundian horizons. Their goal: to let their savoir-faire and high standards resonate through other lands. An identity expressed differently—shaped by a new soil, a new light, a new energy.The Côte Chalonnaise quickly stood out: freshness, relief, precision—an understated yet remarkably precise terroir, especially for white wines.

The name CAVEA echoes Montagny-lès-Buxy, a village set in a natural amphitheatre of vineyards. In Roman times, the cavea referred to the curved tiers of theatre seating—a fitting image to evoke the staging of terroir, its structure, and its elegance.

Appellations

Four cuvées, four expressions of a single terroir

From Bourgogne Blanc to the “Nos Lieux-Dits” cuvée, Domaine de la Cavea explores the nuances of Chardonnay on the hillsides of Montagny-lès-Buxy.
Each wine is born from a specific place, a unique light, and a patient work of observation.

Iconic plots like Les Vignes Derrière or Les Coères each reveal, in their own way, the vibrancy, depth, or tension of the terroir.

Hand Harvesting

Grapes are picked by hand for each cuvée, with sorting done directly in the vineyard.

Vinification & Ageing

Fermentation in stainless steel tanks, followed by ageing on fine lees in oak barrels.

Organic Certification in Progress

A commitment from the outset to responsible and sustainable viticulture.

Parcel-Based Precision

A thoughtful initial blending, with the ambition to develop single-parcel cuvées in the future.

Domaine de la Cavea spans 7 hectares in Montagny-lès-Buxy, including 6 hectares of Chardonnay classified as Premier Cru, and 1 hectare of Aligoté in the Chailloux parcel, known for its flint-rich soil.
The vines, planted on clay-limestone slopes shaped like a natural amphitheatre, are cultivated with great care: light tilling, natural grass cover, and moderate treatments using copper and sulfur — all in respect of the soil and the vine’s natural cycle.
