2005
This vintage is in the process of being shipped.  Its balance, roundness and length will make it a great vintage for ageing and pleasure.

2006
Although it was harvest late this year, the malolactic fermentations have ceased since the end of August. The various vintages have matured nicely and changed delightfully thanks to this second fermentation. If the red fruit aromas are still present the tannins have developed to emphasize a good balance. This wine will need to age for several years to benefit fully from the great potential of these vintages. Bottling will begin in December starting with the Bourgogne Appellation and will be followed by the Nuits St Georges’ and the Premiers Crus’ during the early months of 2008.

2007
This year’s exceptionally mild winter, allowed the work in the vines to progress without any setbacks. The vegetation was awakened by the warm early spring, which announced a perfect vegetal cycle with the harvest taking place earlier than usual. Summer wasn’t as nice, as it was cold and wet. However all the work carried out in the vineyard, as well as the balance of the soil, being more active, finely produced beautiful grapes. The vine blossom announced that harvesting would take place around the 25th August.

next 2007
The first grapes were harvested on the 1st September in the Perrières parcel, followed, depending on maturity, by the 1er Cru and the Nuits Village parcels. The effects of a poor summer were fortunately compensated by good weather during the end of August and beginning of September. The maturity quickly developed during these still long days, the dry weather cleansed the situation and the grapes retained a good acidity from the cool nights. The manual harvest allowed for strict sorting as soon as the grapes arrived at the winery and only the healthy and very ripe grapes finished in the vats. As a result the harvest took place in fine dry weather and ended on the 8th September.
This year, a new fermenting room completed the effort made to the vineyard.

New ideas on the convoying of the grapes respecting even more the harvest.

New structure for working each vintage.

New punching of the cap technique for thermoregulation of the grapes for a better optimisation of this vintage’s qualities.
Tasting suggestions: The Nuits St Georges from Domaine Henri Gouges and in particular those resulting from the southern area of the vineyard (Pruliers, Vaucrains, etc…) are naturally wines for ageing. Between five and ten years is ideal for these wines to fully benefit from a good ageing. After this period the wines can be served after having been opened at least one to two hours beforehand, eventually after having been decanted. Prior to serving the wine should be opened one hour beforehand after having aged in the bottle for ten years, ten minutes in the glass will suffice to “open” the wine.

If for personal taste one wishes to drink the wine earlier, the time spent decanted will be in proportion to that spent in the bottle. For example a 2004 vintage opened in 2008 should be decanted two to three hours beforehand.
